Right after you pick it, cool down the corn. You’ll need to store it in the fridge. If you don’t do this within 24 hours, the kernels will lose all their sweetness.

Pick Corn When It Reaches The Milk Stage

Kernels will go through different developmental stages such as pre-milk, milk, early dough, and dough. When you spot that the kernels are mostly yellow and milky, harvest them!

This stage is my favorite, and if you also love the sweetness of corn, you’re going to love it too! It’s when the corn is juiciest and most delicious. Pick it gently from the stem to avoid damaging the plant. Then, chill it in the fridge, and it’ll be ready for your kitchen specialties!

Let The Kernels Dry For A Tasty Snack

If you’re planning to use the corn right after harvesting, keep it at room temperature. If you don’t have time to prepare it the same day, you can store it in the fridge for up to seven days.

You can also freeze the corn, and it will stay good for up to six months. Don’t worry, it will keep all its summer sweetness!
